Chef Baldassare Mazzara creates fusion Mediterranean cuisine shaped by his Sicilian roots, his experience in Paris’s finest houses, and his travels. At lunchtime, Le V keeps pace with business meetings and regular guests alike. In the evening, the atmosphere becomes more intimate, ideal for lingering conversations, confidential dinners, and suspended moments beneath the glass roof.

The Bar & Lounge extends the experience in an intimate, artistic, and welcoming atmosphere, with signature cocktails and a menu designed for the pure pleasure of taste.

At Le V restaurant, Chef Baldassare Mazzara composes Mediterranean fusion cuisine inspired by the fragrances of his Sicilian childhood, his travels and a more contemporary approach to flavour. Fresh produce, seasonality, sun-drenched notes, bold pairings: each dish expresses a cuisine that is clear, generous, and precise.

His creations evoke the Mediterranean without ever being confined by it. Sicilian flavours meet other influences, unexpected combinations, and careful attention to textures and balance. The plate remains elegant, but never static; indulgent, yet always mastered.

Monday to Friday from 12:30 p.m. to 2:00 p.m. and from 7:30 p.m. to 9:00 p.m.

Beneath a fresque by Jean-Michel Alberola, the décor combines the spirit of a private residence with contemporary touches and a curated collection of artworks. The lighting, materials, and lines of the furniture create a warm setting, suited as much to quiet confidences as to more animated conversations.

Signature cocktails, reimagined classics, carefully selected wines, and alcohol-free creations come together in an experience designed for every moment of the day.

Le V also hosts private and professional events in a rare setting in Paris. Executive lunches, confidential dinners, press meetings, cocktail receptions, product launches, or corporate events: each format benefits from the distinctive atmosphere of Hôtel Vernet and the elegance of its restaurant beneath the glass roof.

At the back of the dining room, a more intimate salon allows private moments to be arranged away from view, for around ten guests. The layout of the space, the quality of the service, and Chef Baldassare Mazzara’s fusion Mediterranean cuisine make it possible to imagine bespoke experiences that are professional, warm, and perfectly orchestrated.

Le V invites you to discover the flavours of summer through its Tasting Menu. A three-course gourmet experience – starter, main course and dessert – showcasing seasonal produce and creations inspired by the freshness of summer.

Designed to offer a glimpse into Chef Baldassare Mazzara’s culinary world, this menu celebrates elegant and generous cuisine, where each plate reveals a balance of flavours and the richness of summer ingredients.

Tasting menu: starter, main course and dessert for 59€ per person. An exclusive offer available in June and July, evenings only.
